Noon Chai (also called Sheer Chai) is Kashmir's everyday pink tea — salty, not sweet, and coloured entirely by an aeration technique rather than any added colouring. It's what's actually served in most Kashmiri homes each morning, alongside (not instead of) saffron-forward drinks like Kahwa.

Why This Recipe Actually Works

  • The Pink Is Real: No food colouring — repeatedly aerating the tea liquid oxidises it into that signature pink-purple shade.
  • Salty, Not Sweet: Unlike Kahwa, Noon Chai is traditionally salted. If you want it sweet, that's a modern variation, not the original.
  • Ready in 30 Minutes: Most of that time is hands-off simmering and aeration.
