Ingredients
- 1 cup basmati rice
- 2 cups water
- 1/2 cup sugar (adjust to taste)
- 1/4 cup ghee
- 10-12 cashews
- 10-12 almonds (sliced)
- 2 tbsp raisins
- 2-3 green cardamom pods
- 1-inch cinnamon stick
- 2-3 cloves
- 1/2 tsp Kashmiri saffron (Kesar)
- 2 tbsp warm milk
- A pinch of salt
Instructions
Step 1: Prepare the Saffron
Soak 1/2 tsp of Kashmiri saffron in 2 tbsp of warm milk. Let it sit for 10 minutes to release its aroma and colour.
Step 2: Cook the Rice
Rinse the basmati rice thoroughly and soak it in water for 15 minutes. In a pot, bring 2 cups of water to a boil. Add the soaked rice and a pinch of salt. Cook the rice until it’s 80% done. Drain any excess water and set aside.
Step 3: Prepare the Dry Fruits
Heat ghee in a pan and fry the cashews, almonds, and raisins until golden. Remove and set aside. In the same ghee, add cardamom, cinnamon, and cloves. Sauté for a minute until fragrant.
Step 4: Assemble the Modur Pulav
Add the partially cooked rice to the pan with the spices. Mix gently. Add sugar and the soaked saffron milk. Stir well to combine. Cover and cook on low heat for 10-15 minutes until the rice is fully cooked and aromatic. Garnish with fried dry fruits and serve warm.
