Ingredients
For Meatballs
- 500g minced mutton or lamb
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp fennel powder
- 1/2 tsp cardamom powder
- Salt to taste
For Yogurt Sauce
- 2 cups yogurt (whisked)
- 2 tbsp ghee
- 1 tsp cumin seeds
- 2-3 green cardamom pods
- 1-inch cinnamon stick
- 2-3 cloves
- 1/2 tsp Kashmiri saffron (Kesar)
- 2 tbsp warm milk
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp fennel powder
- Salt to taste
- Fresh coriander for garnish
Instructions
Step 1: Prepare the Saffron
Soak 1/2 tsp of Kashmiri saffron in 2 tbsp of warm milk. Let it sit for 10 minutes to release its aroma and color.
Step 2: Make the Meatballs
In a mixing bowl, combine minced mutton, ginger paste, garlic paste, fennel powder, cardamom powder, and salt. Knead the mixture for 10-15 minutes until it becomes smooth and pliable. Shape the mixture into small, round meatballs and set aside.
Step 3: Cook the Meatballs
Bring a large pot of water to a gentle boil. Add the meatballs and cook for 10-15 minutes until they are firm and cooked through. Remove and set aside.
Step 4: Prepare the Yogurt Sauce
Heat ghee in a pan and add cumin seeds, cardamom pods, cinnamon stick, and cloves. Sauté until fragrant. Add ginger paste, garlic paste, and fennel powder. Cook for 1-2 minutes. Reduce the heat and slowly add the whisked yogurt, stirring continuously to prevent curdling. Add the soaked saffron milk and salt. Mix well.
Step 5: Assemble the Gushtaba
Gently add the cooked meatballs to the yogurt sauce. Simmer on low heat for 20-25 minutes, allowing the flavors to meld. Garnish with fresh coriander and serve hot with steamed rice or naan.
